We will polish 5% more, and Dassai 50 will change to Dassai 45 from April 1st, 2019.
Dassai 50 is, like a basic sake category “Futsu-shu” for general sake breweries, casual standard among Dassai ranges from polishing ratio 23%, 39%, to 50%.
However, even Dassai 50 is casual sake, we are not satisfied with moderate quality or we do not make it as mass production with less effort. Because it is quantitatively the most popular Dassai in our ranges, we want to craft it better than yesterday, and try to pursue our ideal taste as much as possible.
To improve the quality, we decided to polish 5% more. Complexity and elegance of taste are surely increased by its 5% difference. In the past, it was impossible to make this improvement when our production size had been smaller, because cost of production could not be covered. Now, we make Junmai-Daiginjo sake for 35,000 koku (=6,300kl) per year, and are able to manage the increase of polishing ratio.
