Tasting: A pale bright clear primrose, the bouquet shows some delicious ripe pear fruit, almond and dried fruits, but the underlying lacy detail of fine Genevrières is sitting clearly underneath. A little touch of warmth behind, with good persistence of the fruit.
Food matching: Salmon maki, shrimps in curry sauce, Beaufort or blue cheeses.
History: Félix Baudot, born 1796, was a great collector of paintings, stained glass, antique stela. These objects were sold by public auction in Beaune in 1882, all proceeds coming to the Hospices de la Charité. This Cuvée comes in equal parts from Genevrières dessous and dessus. The vines are all fully mature or ancient. The youngest (23% of the Cuvée) date from 1979, all the others being older – from 1944, 1948, 1956 and 1964.
