VINEYARD INFORMATION: The vineyards are centred around Puligny and a part of the Blagny hamlet, on a gentle, east facing slope, about 230 to 390 m above sea level. The stoney clay and chalk soil, drains well and warms through easily. Chardonnay is the only grape variety used for the white wines.
VINIFICATION AND MATURATION La récolte est manuelle en petite caisse afin de préserver l'intégrité du fruit. Les raisins sont ensuite pressés en douceur puis fermentés dans les fûts de notre tonnellerie dont un tiers sont neufs. L'élevage dure 15 mois environ sur lies fines avant la préparation pour la mise en bouteille.
SERVING TIP Saumon rôti, poulet rôti, viandes rouges grillées : bœuf, côtelette d’agneau, osso bucco, ragoût, civet, bœuf bourguignon, canard, caille, perdreau, bœuf teppanyaki, chevreuil, marcassin, écrasé de pommes de terre au beurre salé, Cîteaux, Mont d’Or.
