Vineyard Information: Pommard is on a slope, between 240 and 380 metres, facing east or south-east. Pommard can only be red. There is no grand cru wines. The quite clayey calcareous soil gives Pommard some quite original qualities : a lot of colour, deep red black, intense and pungent bouquet of blackcurrants, musk and game meat.
Vinification & Maturation: Harvest is done by hand, grapes are put in small cases in order not to damage the berries. Grapes are then sorted out by hand and destemmed. Maceration in open wooden vats or in stanless steel vats lasts 3 to 4 weeks. During fermentation pigeage is done twice per day. The wine ages 18 months in oak barrels from our cooperage; 1/3 of the barrels are new.
Serving Tip: Roasted salmon, roasted chicken, grilled red meat : beef, lamb chops, osso bucco, stew, ragout, bœuf bourguignon, duck, partridge, quail, deer, young wild boar, teppanyaki beef, mashed potatoes with salted butter, Cîteaux, Mont d’Or.
